Sophia's Power Cookie Recipe

1 & 1/2 cups spelt flour
½ tsp salt
1/2 tsp cinnamon
1 Tbs flax seeds
1 & 3/4 cups rolled oat flakes (quick cooking)
1/2 cup sunflower seeds (shell-less)
1/2 cup pumpkin seeds (shell-less)
½ cup hempnut seeds (I have never put these in, but whole foods has them on the ingredient list)
1/2 cup raisins
1/3 cup canola oil
1/3 cup molasses
1 Cup soymilk
¾ cup chocolate chips (the Callebut ones from Superstore bulk are the BEST!)

Preheat oven to 350 F.
Spray 2 large cookie sheets. (This is important, they stick otherwise!)
In a large bowl, put flour, baking soda, salt, and cinnamon. Mix well.
Add oats, raisins, and seeds.
In another bowl, mix canola oil, molasses and soy milk. Beat until well-blended.
Add to dry mixture, and mix well. Add chocolate chips.
Make into cookies on prepared cookie sheets (wet your hands and get in there!).
Bake in preheated oven about 20 minutes (if large cookies), or until cookies are golden
on edges and tops are set. Cool on wire racks.
